Meatloaf For One

Gather your ingredients and cook alongside Jennifer as she creates Meatloaf for One.  This real-time demonstration allows you to create your own meatloaf masterpiece by following along with this step-by-step demonstration.

Ingredients for Meatloaf for One
2 pounds of ground meat (your choice of beef, pork, veal, chicken etc.)
1-2 cups breadcrumbs (your choice of panko, bread, pretzels, bagels, cous cous, etc.)
2 eggs
1/2 cup grated onion
1/2 cup grated parmesan cheese (optional)
Veggies of your choice (chopped small, optional)
2 teaspoons salt
1 teaspoon pepper
Any other seasons that float your boat

Ingredients for Topping
(The amounts below are for individual loaves.  If you are making a full meatloaf, triple or quadruple the recipe.)
1 tablespoon tomato paste
1 tablespoon ketchup
A drop or two of honey (optional)
A drop or two of mustard (optional)
Dash of Worcestershire sauce (optional)

Instructions
1) Throw all meatloaf ingredients into a large bowl and mix with your hands until combined.  Be sure not to add the topping ingredients.  You’ll save these for later.
2) Form meatloaf mix into your shape of choice and place in cooking vessel of your choice.  I made mini free-form loaves, but you could also put them in mini loaf pans, ramekins, muffin tins – the meatloaf world is your oyster.
3) Mix topping mix and spread liberally on top of your meatloaf.
4) Bake covered at 350 until internal temperature reaches 160 degrees.  Remove cover and continue cooking uncovered until internal temperature reaches 165 degrees.

You can personalize the basic recipe to make an almost infinite variety of variations.  Add taco seasoning and top with salsa and you have Mexican meatloaf.  Stuff the center with cheddar cheese and top with ketchup and you have cheeseburger meatloaf.  Use Italian seasoning, stuff with mozzarella cheese, and top with marina sauce and you have Italian meatloaf.  Really – the varieties are only limited by your imagination!
